The Dragon Series is a tribute to the timeless power struggle between science and nature. The series represents the diversity in whisky production and the balance between order and chaos. Iteration II - The Spirit represents the first stage of production at the distillery. The malted barley from the field goes through the three key processes of mashing, fermenting and distilling. The potential variables and unpredictability multiply further through these steps, for example to gravity, temperatures and cut points, before the floral and fruity distillery character from the Lowlands evolves through ageing in first-fill and refill bourbon casks.
