For the Martell XO Cognac from Martell, eaux-de-vie from various crus are used, focussing on the Borderies and Grande Champagne regions. Cru is a French term used in oenology and refers to a clearly defined region of origin with a classified quality level. It is used to characterise higher rated growing regions. Distillation is carried out twice in traditional copper stills from white wines, mainly from the Ugni Blanc grape. Maturation takes place in French oak barrels, preferably in older, less toasted barrels so as not to overpower the flavour development of the eaux-de-vie. As an XO Cognac, Martell XO contains only eaux-de-vie that have been matured for at least ten years, many of them considerably longer.

Das Cognac-Haus Martell wurde 1715 von Jean Martell in der gleichnamigen Region gegründet und gilt als das älteste der großen französischen Cognac-Häuser.
