The Sherry Collection from Tomatin is a series of three bottlings that have been matured exclusively in sherry casks. The raw spirit of this bottling, which was distilled back in 2008, was refined in Palo Cortado sherry butts for three whole years after its initial maturation and bottled without chill-filtering or colouring. The series was created as a result of the current resurgence in tapas culture, which is closely associated with sherry, and as a tribute to dessert wine. Almost no tapas meal ends without a glass of good sherry.
Paolo Cortado is a rather rare variety of sherry that is created by chance when flor yeast forms on the sherry that is to develop into Amontillado. The sherry comes into contact with flor yeast (biological maturation) and oxygen (oxidative maturation). In earlier times, however, something went wrong during contact with the flor yeast, making the style unpredictable and impossible to plan.

The Distillery: Tomatin
Tomatin has been a rising star among the Scottish distilleries since the beginning of the millennium. The Highland distillery was the biggest Scottish distillery in the 1970, but the quality of the Whisky wasn’t high regarded. Ups and downs followed and after been new positioned from 2000 onwards Tomatin grew to be one of the most reputable Scottish Whisky brands worldwide.

Abgang: Langanhaltende warme Süße, Marzipan, harmonische Eiche
Kommentar: Sehr gute Abfüllung zu einem recht hohen Preis. Die leicht herzhaften Noten vom Palo Cortado Fass passen sich harmonisch in diese saftige Sherry Abfüllung ein. Top!
