The Islay Rum Distillery is located in a former lemonade factory and is the first rum distillery on the island. This limited edition bottling is made from molasses and fermented with indigenous yeast and special distiller's yeast to create aromas of fudge, printer's ink and almonds on the nose. Coconut, liquorice and black pepper follow on the palate. Ùine Mhòr literally means 'long time', which is probably related to the long fermentation period during production. The unaged rum is bottled at 55% vol. and is strictly limited.

The Islay Rum has been producing Rum on the Isle of Islay since 2022 as the first and so far only distillery. The distillery is housed in the Old Lemonade Factory in Port Ellen, which has been lovingly renovated.
