Since its foundation by Mark Reynier, the Irish Waterford distillery has modelled its approach to whisky production on wine production. The distillery team relies not only on barley sourced from regional farmers but also on scientific methods, such as distilling the distillate on an olfactometer. Waterford's main focus is on capturing the terroir and biodynamics, which includes the natural factors of land, cultivation, barley type, climate and season. The barley for Woodbrook Peated comes from farmer Michael Carey's Woodbrook Farm. With this smoky bottling, the distillery is returning to the origins of Irish whiskey production. In order to lose as little of the 'terroir' as possible, Waterford whiskey is only distilled twice, unlike other Irish whiskeys. Maturation takes place in four different types of cask and Waterford was the first distillery to use Irish peat from Ballyteague in County Kildare since the 1850s.
Waterford Woodbrook Peated differs from its sibling Waterford Lacken Peated in the proportions of the cask composition and is also significantly smokier at 74 PPM.

The Waterford Distillery was created in 2015 by converting a former Guinness Brewery in Waterford, in the very south of Ireland. The distillery's founder Mark Reynier was formerly the mastermind behind the rebuilding of Islay Distillery Bruichladdich. The former Wine merchant approaches Whisky (spelled without an 'e', even if they come frome Ireland) production in a similar way to Wine production: He wants to capture the terroir, i.e. the origin-specific character of the grain, with his Whiskies.
