This six-year-old blended Scotch whisky is released by the Thompson brothers in small batches, which is meant to pay homage to whiskies matured in sherry casks. It is matured and bottled in the small town of Dornoch near the Scottish Highland coast. The Dornoch distillery was founded in 2016 via crowdfunding and is located on the grounds of the Dornoch Castle Hotel. The artwork on the bottle is a design by the Japanese artist KK Hiroshima, who has also put his art to paper for labels of a well-known rum distillery.

Comment: On the nose is an explosion of Sherried notes: plums, raisins, sweet dried fruit (apricots); then dark chocolate, caramel and oak spices (cloves, nutmeg). There are hints of ethanol and a slightly metallic bitterness, but not disturbing.
Full, oily and mouth coating, it opens with peppery, spicy and slightly salty notes, then the Sherry influence becomes quite evident in the mouth, together with berries, oak wood, malt and honey. But it's not an excessively sweet whisky, there are also bitter notes in the taste, perhaps due to the grain component.
The finish is medium; dry, with a flavour that fades into slightly bitter, spicy notes, cinnamon and some sweetness.
