The 21-year-old Aultmore is very hard to find. Aultmore whisky used to be hardly known by its real name. It was only available in a few bars, and only if you asked for 'a nip of the Buckie Road'. The distillery has been producing Speyside whisky since 1897. Water from a spring in the Foggie Moss region is used for the malt.

Bottlings of the new Connoisseurs Choice series represent single cask bottlings or batches of a few casks and special post-maturations. The labels contain detailed information on the special characteristics. A comprehensive aroma profile is now also included on the labels of the Connoisseurs Choice bottlings. This Aultmore was initially matured in refill Bourbon barrels. It was then refined for three years in strong St. Joseph red wine casks from the Rhône Valley in France.

This Aultmore was released by the independent bottler Signatory Vintage. Andrew Symington founded his company at the end of the 1980s and has always maintained good contact with the distilleries. Today he can call a stock of over 10,000 casks his own. This bottling is part of the Signatory 100 Proof Edition, which are no longer just high-proof, uncoloured whiskies, but affordable bottlings that have been matured for a long time. They are characterised by first-fill Oloroso sherry casks, but this is a single malt that was long considered an outsider due to the strong demand for blends. After 17 years in the cask, it skilfully combines spicy and herbal notes with the nutty sweetness of the sherry casks.

This cask strength Aultmore single malt was launched on the market by the independent bottler A.D. Rattray in the Cask Collection. Only individual casks are bottled in the series, which usually only yield a few bottles. All whiskies are not chill-filtered and are colourless. The 12-year-old matured in a bourbon barrel. Originally a trading company founded by Andrew Dewar Rattray, his descendant Tim Morrison developed the company into an independent bottler with its own brands.
