Product description
Kilchoman Genesis describes the 1,130 day journey from harvesting the barley to bottling. Stage 4 is the fourth bottling of the limited series and refers to the mashing from day 28 of production. In the custom-built, hand-operated 1.2 tonne mash tun, slowly rotating rakes are used daily to extract fermentable sugars from the crushed barley grains. This produces a sweet liquid called "wort", which forms the basis for Kilchoman whisky. After distillation, 75% of the smoky Islay malt was matured in bourbon casks, 20% in cognac casks and 5% in sherry casks.
